Level 1 food hygiene is designed for individuals involved in serving meals, delivering, or handling pre-packaged food items. This level of hygiene is crucial when handling non-perishable foodstuffs that do not require refrigeration or have a specific shelf life. Examples of such items include fresh produce, such as fruits and vegetables, as well as dry goods like nuts, rice, and pasta. Additionally, it encompasses staple items like tea bags, herbs, and spices. Understanding and implementing Level 1 food hygiene practices ensures the safe handling and presentation of these foods, helping to prevent contamination and maintain food quality from the point of delivery to the final consumer.

These foods require visual inspection, and the methodology for determining whether they are suitable for the end user depends on whether the consumer (who also visually inspects the food) will buy it or accept it.

However, it's essential to be aware of cross-contamination, high-risk foods, and allergens, as even a single split shellfish can contaminate or cross-contaminate many other items.

The practices of maintaining personal, workspace, and storage hygiene, proper techniques for cleaning and disinfection, correct methods for storing food, and strategies to prevent cross-contamination between different food types are all covered in the Level One food hygiene course.

Level one food hygiene aims to provide individuals with the necessary knowledge to handle food safely and prevent the spread of foodborne pathogens and diseases. Participants learn about the importance of food safety protocols and how to apply them throughout the entire food handling process.
