How Long Can Food Be Kept At Room Temperature?

In the UK, it's really important to be careful with foods that spoil easily, such as meat, dairy products, and cooked rice. These are known as high-risk perishable foods, and if they’re left out at room temperature—often called the “danger zone” (between 8°C and 63°C)—for more than four hours, they can become unsafe to eat. To keep everyone safe from foodborne illnesses, it's best to minimise the time these foods are outside the fridge. Many food safety tips suggest putting these items back in the refrigerator within 1 to 2 hours after serving.

Here are some straightforward food safety tips to keep in mind:

  • The 4-Hour Rule: If perishable foods are left out for up to four hours, they can still be safe to eat. But if they've been out longer than that, it’s best to throw them away to avoid health risks from bacteria.
  • Cooling Hot Food: When you have leftovers, it’s important to cool them quickly. Aim to do this within 90 minutes before putting them in the fridge. This helps reduce the chances of harmful bacteria growing.
  • Storing Leftovers: After cooking, make sure to cool any leftovers properly and refrigerate them within 2 hours. When stored properly, these leftovers can be safely eaten for up to 2 days. Use airtight containers to keep the food fresh.
  • Picnics and Warm Weather: The same safety rules apply when you’re having a picnic or during hot weather. Try to eat or refrigerate your food within 2 hours to keep it safe and tasty.
  • Keeping Food Warm: If you’re serving hot food, keep it above 63°C. If it drops below this temperature for more than 2 hours, you should either cool it down and store it or throw it away for safety.

It’s also good to remember that some foods, like canned goods, are safe to keep at room temperature and don’t need refrigeration. Being aware of these food safety practices is really important for keeping you and your loved ones healthy when handling perishable foods.
