Food and Hygiene Level 2 Explained
The phrase " Food and Hygiene Level 2" is commonly used for Level 2 Food Safety training. Just as many people call a vacuum a Dyson or a Hoover, Food Safety Level 2 is commonly known as food hygiene. The words “hygiene” and “safety” are often used interchangeably in common language, but the correct term is “food safety.”
Essentially, hygiene refers to practices that primarily involve cleanliness, but not just to keep your T-shirts white. In food safety, it covers personal hygiene and environmental hygiene, including sanitising and disinfecting areas as required.
However, hygiene doesn’t encompass temperature controls and their importance for cooking, chilling and freezing. Neither does hygiene cover all aspects of cross-contamination and allergen risks.
Such practices as keeping raw ingredients separate from cooked foods or placing raw meats on lower shelves in the refrigerator to prevent potential drippings from coming into contact with other products cross over between hygiene and safety. But even some crossover elements are not strictly about hygiene. They are about keeping food safe, not keeping food clean.
So, Food and Hygiene Level 2 doesn’t exist. The training is actually Food Safety Level 2, which covers safety and hygiene for people who prepare food. It’s essentially the go-to training for all UK chefs.
That said, Google searches for food hygiene are far higher than those for food safety. So, food and hygiene might be the wrong words, but they are definitely the most commonly used.
